1 Article 8 of the Code du vin uses the expression reduced extract the definition of which is annexed to the order of 24 June 1963 on official methods for the analysis of wines and grape musts: The reduced extract is the total reduced dry extract less all the total sugars in excess of 1 gramme, potassium sulphate in excess of 1 gramme, mannitol, if any, and all chemical substances which may have been added to the wine'.
